• Description: Rozendal Fynbos Vinegar is a balsamic-style, aged, and fortified solera system vinegar. It is flavored with fynbos herbs that reflect the rich biodiversity of the Cape floral kingdom.
• Ingredients: It is made from red wine vinegar, grape must, dried buchu, dried honeybush, fresh rose geranium, fresh wild olives, and wild rosemary.
• Production Process:
  • Fermentation: Rozendal employs the traditional French Orleans method of vinegar making. Wine is cultured by an indigenous “mother” (the acetobacter) from the first vinegar made on Rozendal in 1988. It is allowed to ferment naturally in small oak barrels.
  • Maturation: The balsam is then matured for up to 20 years in oak barrels, softening its taste. Ageing takes place over a solera system, where old vinegar is blended with new to ensure consistent character.
  • Bottling: Small batches are bottled using a gentle gravity-flow system, allowing the vinegar to evolve and mature further in the bottle.
